If I pulled off 2 epic spells ({enduring ideal}) on the stack at the same time, what happens when I recast them? Do I get both or just 1 of them?

If you could pull it off (perhaps with {Vedalken Orrery}), you would get both. As long as the first one hasn't resolved yet, you can still cast another, and get both of their effects.
