I'm a bit confused by how {Mutavault} functions. It says that it becomes a 2/2 with all creature types but is still a land. Does this mean that it can be the target of spells that deal damage to creatures? If it dies as a creature, is the land destroyed as well?

Yes, one of the many downfalls of man lands
Aside from damage, spells that destroy creatures (killspells) such as {murder} will also kill an animated mutavault. It can also be unsummoned and will still be subject to the 1-land-a-turn rule should you chose to play it. Practically anything that affects creatures can affect an animated {mutavault}
NOTE: you cannot animate and attack with mutavault the turn you played it without using something to give it haste.
