I like the Cherenkov effect personally, it makes cool colors. (It's what gives nuclear reactors their cool glow). Another cool one is the Magnus effect, very important for baseball, golf etc...

Either entanglement, because it breaks the speed of light barrier, or superfluidity (have you ever seen liquid helium? It is freakin' phenomenal!!)
