Let's say I have {Bow of Nylea} and {Polukranos, World Eater} in play. Polukranos is not monsterous. I enter my attack phase and declare Polukranos as an attacker. Before blocking is declared, I activate its ability for lets say, x=3. Would the damage that results from this be considered deathtouch damage?
Polukranos is still attacking. Is he not? I would say it does.
Yes, it is damage, not combat damage, so you would be correct, it is Deathtoich.

702.2c (http://imtgapp.com/forum/index.php?action=imtg;area=rule;number=702.2c): A creature with toughness greater than 0 that's been dealt damage by a source with deathtouch since the last time state-based actions were checked is destroyed as a state-based action. See rule 704.
So fighting and such also works I think.
Yep, as seen in the rule posting above it will be deathtouch since it is the deathtouch creature doing the damage. This is why {izzet staticaster} and {nightshade peddler} were such a good combo
