The new spoiled card Akroan Horse is an 0/4 creature with defender and:
When Akroan Horse enters the battlefield an opponent gains control of it.
At the beginning of your upkeep each opponent puts a 1/1 white soldier onto the battlefield.
My question is, since it's under an opponents control, does that mean that you out the soldier token onto your side of the field?
Yep. It's a Trojan horse. They get the useless artifact (not a bad defender in this case) and each of that players opponents (you in a 1v1) gets a soldier token at the start of their turn.
In multiplayer, do you target which opponent gets horse?
You do not "target" but you do choose an opponent.
Put {Gift of Immortality} or {Indestructibility} on it, alacazam, a token generator you don't have to protect.
That's a great flavour card I love it. And not bad of an effect either
Anyone else notice {Theros} copy's Greek Mythology?

... That was the inspiration.
Do you meant T Heros?
Theros is the Greek word for feral or beastly

I think it is "each opponent".

He asked "which opponent gets horse", not "which opponent gets 1/1 soldier token"...
