If someone uses Sorin, Lord of Innistrad's last ability can someone activate an instant that exiles those creatures and if they can do those creatures still come back to the controller of Sorin?

I would say no due to the fact the card says when they in enter the graveyard.. If they get exiled on the stack after sorin ult. , no valid target. And they don't reach the gaveyard
So, here's the thing.
You CAN exile a permanent targeted by Sorin's ultimate. If it is exiled (say by a spell like {path to exile}), it will not be destroyed, and therefor not be returned under Sorin's controller's control.
You CANNOT, however, use a spell like {Cremate} to exile the destroyed cards after being destroyed, but before being returned under that player's control. Once an ability starts to happen (the destroy part), it can't be stopped or interrupted until the entire ability (including the return under control part) has finished resolving.
Gonzo, I believe if the targets are being destroyed by other effects other than Sorin's Ultimate, those cards will not return to Sorin's controller? Since it says "Return each card put into a graveyard this way"?

This is true, and goes along with the second part of what Gorzo was saying. You can't do anything in the middle of an ability. Also, two effecrs cannot destroy a creature at the same time.
If Sorin destroys it, it comes back, and there's no time for something else to destroy it (you cannot destroy an already destroyed permanent).
If something else destroys it, then its not even a valid target for Sorin's ability anymore, and will not come back.
