Can you {stifle} anihillator?
Or respond in any way like tapping land before you sac it?

Sure! It's a triggered ability, and is treated no differently than any other trigger. It uses the stack, and can be responded to by {Stifle}.

As far as the land goes, it's possible, but keep in mind that mana pools empty when phases and steps end, so you won't have the mana for too long.

His Annihilator can be countered by {Stifle}. It doesn't target Emrakul, so it's fair game.
