I've yet to play against bant control myself, but I will say that both are tough for my aggro deck.

I like American better myself because I like  {Mizzium Mortars} and both have access to  {Ætherling}

I'm trying out grixis control this week and so far I'm having a lot of fun with it

When I play control I personally play with American control but I've played baby control to and there both pretty good but I'd go with American and I can't say anything about esper control

American control is probably one of the better choices right now mainly because of  {Pillar of Flame} for  {Voice of Resurgence}. Plus  {Ral Zarek} ,  {Warleader's Helix} , and even  {Boros Charm} are great in that deck. Your 8/1 unblockable  {Ætherling} gets un answered? Give it double strike.

American is the easiest to play but weakest of the three. The card advantage and and versitility are lacking. This shows more in local meta's than in major events where the opponents are more predictable.

Grixis is fun but weak.

Esper has two forms.
Esper midrange which has grown very popular but isnt my personal favorite. It uses walkers and other sorcery speed forms of control whih while strong leave you open to decks with explisive potential.
Hard esper control is my prefered type. This is strickly draw go, extremely patient, and can win with mill or extort and little pokes. Aside from one ætherling main and {supreme verdict} the sorcery speed spells dont cost more than 2. This leaves you constantly ready for whatever your opponent throws at you. I do however sidebaord into a blitz like esper aggro that steals wins.

Bant can be flash, midrange, or wolfrun.
I like {kessig wolf run} for it's ability to make all of bant's utility creatures into endgame cards.
Midrange I have seen mixxed results as you have to choose your tools and bombs very carefully for your meta.
Flash is strong and consistant but cant always close the game against stable midrange decks.

Bant wolf run or an esper variant would by my first recommendations for anyone.
