Title: test of faith + fight

could you {test of faith} a creature, have it fight another creature, and prevent the damage?

How are you preventing the damage? Preventing combat damage won't do anything, but if you have a "general" damage prevention spell/ability, then yes.

Alright then. Yep, this will work! Damage prevention spells work normally for "fighting" as long as they don't specifically prevent combat damage.
