Title: Amulet of vigor and gruul turf

If I have two  {Amulet of Vigor} and a  {Gruul Turf} as the only land on the field could I untap it with the amulet and tap it for mana before it returns to my hand

You can! Make sure you place the "return a land" trigger on the stack before the Amulet's trigger, and you're good to go.

The amulet will resolve, untapping your land. You can then tap your land for mana, right before the land's trigger resolves, and returns it to your hand.

You can do this when you bring  {Gruul Turf} into play. It comes in untapped due to  {Amulet of Vigor}, then you may tap the turf before returning it to your hand

What about a  {Cloudpost} can untap it with one amulet and tap it for mana as a interrupt and untap it with the second amulets trigger

Yep! Knowing how to use triggers can be pretty rewarding.
