If I were to play progenitor mimic and the spell resolved. I chose to copy strangleroot Geist and that also resolved.
I also have a thragtusk on the field.
(This is just an example. Of course I would've copied the thragtusk.)
It would essentially enter the battlefield with the undying ability. So lets say it dies in combat. Does it come back into play with a +1/+1 counter and the ability to chose a new copy (to copy thragtusk), does it stay dead, or does it come back as a strangleroot Geist again?
Progenitor comes back with +1/+1, and chooses a new copy. The tokens it creates every upkeep do not come back
So it can't make tokens anymore after it comes back?
The tokens will continue being created every upkeep. What he means is that the tokens that have undying from copying {Strangleroot Geist} won't come back to play from undying as tokens disappear when placed in the graveyard.

After It comes back can it then copy thragtusk? Then put out copy's of thragtusk?
Indeed. The tokens it generates will also gain the benefits of {Thragtusk}, the 5 life when the tokens come into play and a 3/3 token when they leave play.
