Title: Undying evil and on field effects.

Does the card  {Undying Evil} work with on field effects such as the discard from  {Ravenous Rats}? Does the creature actually touch the graveyard and come back or does it work like regenerate?

ETB effects will work. The creature has to die for undying to trigger, so it hits the graveyard, and then comes back.

Thx, was curious. Can you use that in response to  {Supreme Verdict} being cast to avoid losing a creature?

Yep! Your card will resolve first, and make your creature Undying. When its destroyed by the verdict, it will come back.
