Well, you still have to play the Thopter that turn. So you can't do much on each turn.
But you can do other .poo. with those turns think unlimited turns you can have a few mana open to do other things and they can't do .poo. bc if you time it right they will be tapped out

Edit 2: im sure you can find an infinent turn combo with the mimic though.
There's an infinite turn deck out there in modern based off of repeatedly using {Mindslaver} and getting it back every turn with {Academy Ruins}.
There are number of other ways to accomplish infinite turns if you really wanted to. {Enter The Infinite} followed the next turn by {Beacon of Tomorrows} results in endlessly playing the same beacon and drawing it again on your extra turn. Meanwhile if you have something like {Reliquary Tower}, the entire remainder of your deck is now your hand, and you have all the turns in the world to use it.
But that costs so much mana that's way more than my combo. It's pretty cool to have your library as your hand but still it'd be way to hard to cast those

True, they are more mana to initiate than the {time sieve} + {Thopter Assembly} combo, that is for sure. But what makes the other combos appealing is that they are much harder to stop.
Time Seive + Thopters can be stopped by:
Counterspells (duh)
Creature removal
Artifact removal
Creature removal is very common in modern, and artifact removal is very common in sideboards thanks to affinity.
Mindslaver + Academy Ruins deck can be stopped by:
Counterspells (duh)
Immediate Land removal
Land removal does see moderate play in modern ({Acidic Slime}, {Tectonic Edge}), but usually you can already be mindslaving their turns and tapping out their mana/ruining their ways of stopping you before you put down the ruins.
Enter The Infinite - this isn't being played in modern as far as I know, I more or less pulled it out of my butt as an example of one of many ways to get infinite turns :P but for the record, it can be stopped by:
Counterspells (duh)
{Sire of Insanity} being on the field
This isn't to say these are by any means better. As you said, there's a big difference in how much mana you need, and that's a big deal. Just offering additional combos with the same intention to add to thread, that have different pros and cons :)
{Progenitor Mimic}+ {Archaeomancer} with {Time Warp} or your favorite extra turn spell in the graveyard. This one is super easy to stop because of enchantment, creature, and graveyard hate.
