So. I started playing against my acquaintance's Izzet deck. He constantly ends up casting this card.
{Sleep}
He says the cards never untap because it isn't specified.
Is this true or would my creatures untap two turns from the playing of this card?
Also, on a side note.
Do sorcerers remain in play? Such as if Sleep has a lasting effect like that. Wouldn't it remain in play and not go to the graveyard?
They would untap your second turn after he played {Sleep}, unless he played another sleep on his next turn. No, sorcery spells go to the Graveyard right after resolving, even if the effect lasts longer.

Sorceries go to the graveyard after they are played. The effects of sorceries only happen once and on the turn they are cast. So with {Sleep} your creatures wouldn't untap on the turn after your opponent casts it but the turn after that the effect of {Sleep} wears off and you untap normally
The effect of {Sleep} last until after your next untap step.
Ex: on turn six your opponent plays {Sleep} and taps your creatures.
Turn seven comes your creatures remain tapped due to the effect of sleep
On turn 8 during your untap step you can then untap your creatures as sleeps effect wears off.
I knew it! So I lost to him because I couldn't extort and regain my life because my creatures were tapped and he was a cheating [deleted].

1) Assuming {Sleep} is cast on his turn, and not through some shenanigans like {Hypersonic Dragon} or {Alchemist's Refuge}. Once {Sleep} resolves, it will tap all of your creatures, and any creatures you control are already tapped will still technically be tapped as well. During your next untap phase, and only during your next one, unless otherwise specified through some other means, your creatures will not untap. During the untap step following that one though, they will indeed untap. Assuming he does not cast another.
2) Upon casting {Sleep}, and it resolving, it will then go to the graveyard unless another card specifically says otherwise. It will not stay in play.
You can extort regardless of your creatures tapped/untapped state. It is a triggered ability that does not require tapping.
So is Extort able to be used if I summon a creature lets say {Syndicate Enforcer}. Then play a enchantment say {Dying Wish}

Extort is a triggered ability. Whenever its conditions are met (in this case, casting a spell), its effect will go on the stack. Summoning sickness does not have an effect on triggered abilities.
When you cast the extort spell, it doesn't count itself as an "extortion" if there isn't already another permanent with extort in the field.
Example: You have no cards on the field, and play {Crypt Ghast}. Extort will not go off, since nothing on the field had extort when you cast your spell.
Example 2: That same turn, you cast a {Blind Obedience}. Your {Crypt Ghast}s ability triggers, and you can extort your opponent.
