So I'm purchasing the Orzhov deck this weekend
However being rather new to the world of magic, I need to know a very important thing for this deck
Will using the ability extort cause my creatures to "Tap" or can I use a spell. Extort. Then attack/defend with my creatures.
Also I want to know what is considered a spell. In plain English not the whole "on the stack" answer.

Extort does not affect your creature in any way. The ability creates a trigger. This just means if you control something with extort when you cast a spell you can pay to extort that spell for each instance of extort you control.

What is considered a "SPELL" because some people say it is strictly enchants and auras and instants. Others say it is anything from creatures to like. Idk. Playing a new land card.

The game's rules say it is anything other than a land. A creature spell is actually a summoning spell kinda like {call of the conclave} or {advent of the wurm}. However the difference lore wise is that once a creature is actually summoned if it dies it will lie in the graveyard where as those previous examples are simple representations of creatures (tokens).

So I could like summon a bunch of 1 drops and extort for each one? Or does it only work once per turn?

Yes you can do that. That is why i like the design on {pontif of the blight}.

That's my whole plan with Orzhov's Oppression. I eventually want to add in Liliana Vess as well as a obzedat ghost council

{Obzedat, Ghost Council} or such.

Another question. If I tap a land like a guildgate "tap this put white or black in your mana pool" will that count as a spell use?

Nope. A spell is something that you put on the stack, by paying its mana cost. Lands and abilities are not spells.

Here's a little more on spells, from the Comprehensive Rules:

111.1. A spell is a card on the stack. As the first step of being cast (see rule 601, "Casting Spells"), the card becomes a spell and is moved to the top of the stack from the zone it was in, which is usually its owner's hand. (See rule 405, "Stack.") A spell remains on the stack as a spell until it resolves (see rule 608, "Resolving Spells and Abilities"), is countered (see rule 701.5), or otherwise leaves the stack. For more information, see section 6, "Spells, Abilities, and Effects."
