It's power and toughness are equal to how many creatures are yours that are on the battlefield. If its the only one, it's 1/1. If you have ten creatures its a 10/10. Easy.

But is it only creatures you have in play? Do creature tokens counts??

Your creatures. Tokens count as creatures.

{Crusader of Odric} only counts the creatures currently on the battlefield under your control. Also yes, creature tokens definitely count as creatures.
