So if i have a 1,1 creature out along with {Goblin Tunneler} and my turn comes i throw down {Raid Bombardment} and {Lavafume Invoker} then tap {Goblin Tunneler} for unblockable and my creature to attack, blockers are declared (1 or none i assume) and instant speed tap the 8 mana on lavafume for +3 and throw out {Slaughter Cry} and {Barreling Attack} resulting in my orininally 1,1 creature into an unblockable 6,1 or 7,1 (depending on blockers) creature with trample ? Right?
Everything here would go off. This would leave you with (if i did my math right) a 7/1 unblockable first strike trample creature that if somehow blocked would get +1/+1 for each blocking creature.
Oh, and the Bombardment would do the damage, since all the buffs went off after it was declared as an attacker.

One thing I noticed is that your {barreling attack} isn't doing anything useful. If your creature is unblockable, then trample is useless and he won't get any 1/1 buffs for being blocked.

but if they declared there blockers allready are they technically still blocking ?
Yes. Once a creature is declared as a blocker, nothing can change the fact that it is now a blocking creature, and the creature it is blocking has become blocked. No matter what happens to either of those creatures from that point on, including gaining unblockable.
