I am new to MtG, and have this card in a green deck I built recently. It has 'Kavu Chameleon cannot be countered' and an ability of 'Kavu Chameleon becomes any color of your choice'. I get the second part, but what is countered versus blocked? Would it be the same? Thanks in advance for any help you can offer.

To counter a card is to basically cancel it from being played. You can only do it after the card is cast, but before it resolves. Cards that counter are cards like {Counterspell}. If a card is already on the battlefield, its too late to counter it, since its no longer a spell waiting to resolve.
Here's the breakdown of counter spells, from the Comprehensive Rules:
701.5. Counter
701.5a To counter a spell or ability means to cancel it, removing it from the stack. It doesn't resolve and none of its effects occur. A countered spell is put into its owner's graveyard.
701.5b The player who cast a countered spell or activated a countered ability doesn't get a "refund" of any costs that were paid.

Thanks, so basically it's ability can't be countered if I activate that, but the creature can still be blocked like any normal creature. Correct?

Not quite. There are cards that counter abilities specifically, like {Stifle}. This would work on its ability, but when you cast the Kavu to play it, they cannot counter it with a {Counterspell} or similar card. It basically ensures that when you pay the mana to cast it, it's going to hit the field.
Also, you are correct about the blocking. Cards that can't be blocked will be "unblockable", like {Invisible Stalker}.
