As far as EDH is concerned, what would the color identities of {Hunted Horror} and {Tatsumasa, the Dragon's Fang} be? They mention colors only through wording, but is that enough to change color identity?

Their wording does not change their color identity, so they would be black and colorless, respectively.

Another good example of this is {Phyrexian Processor}. It doesn't have any black costs, so it remains colorless in identity, even though it makes a black minion.
