I understand the thought process behind {Defy Death}; however, I think Umbra is correct, and you should focus on {Unburial Rites} over other reanimator cards, and here's why:
1) As mentioned already, it's two for one, and has a less prohibitive casting cost;
2) These cards WILL end up in the graveyard no matter what, so in that regard {Defy Death} and {Rise from the Grave} will often be just dead cards, and;
3) Is a 10/10 Avacyn really that much more of a threat than an 8/8 Avacyn?
Looks cool though. Just make extra sure to protect Gisela from mind control shenanigans, otherwise you may find yourself dead out of nowhere.

I totally understand your reasoning, and maybe you guys are correct (I don't play reanimator much, so I'm not really savy on the archetype), but hear me out. What is the utility of taking up a card slot with a one-of that will often have trouble finding your hand? The five mana and 1-card slot may be better served by an additional creature card. Instead of hoping you don't draw up your one {Defy Death} off of a {Grisly Salvage} or {Mulch}, you could just be hard casting {Thragtusk} or {Obzedat, Ghost Council}. I'm not saying you should run those creatures specifically, but those are a couple of options.
Arguably, if you can do it, {Defy Death} on an {Avacyn, Angel of Hope} after your opponent thinks they're safe by taking out Rites is much more of a game changer than dropping Tusk, but you always have to remember to factor in consistency when considering what cards to play. That's my opinion, but I think your best bet is to go playtest the crap out of the deck both ways and see which way you like better!
