Ok if I have a {clone} and I play {cackling counterpart} on it is it a clone or the card I cloned before
It's a copy of whatever you cloned with {clone}

When the first clone entered the battlefield the text on the card "dissapeared". It just became an exact copy of the creature you cloned. Therefore, when the token enters the battelfield, it will be a copy of the "original" creature, so it won't have the text of "When clone enters the battlefield...".

What would happen if I cloned {Lazav, Dimir Mastermind} that is a different creature, and I have the {Mirror Gallery} in play?

Correct me if I'm wrong but it enters as {Lazav, Dimir Mastermind} and enters as the same creature as Lazav, correct?

It would enter as whatever Lazav cloned, except its name is still Lazav, it's legendary, and it has hexproof and his ability.
