Title: Vampire's Bite [Instant Rules]

If I attack with a creature and after declare defenders my opponent decide not to defend, can I cast "Vampire's Bite" Instant in that moment before the damage it's dealt to the player?

You have priority to cast spells at the end of the declare attackers step and declare defenders step. Right? Right. I think.

Well, technically not at the very end, but essentially, yes.
