When Gavony dies, is the protection lost? Or does it remain in effect? If it remains, does it apply to a human creature that is summoned post mortem of Gavony?

No, the ability goes when gavony dies. Since Gavony is the source of the protection it leaves when gavony leaves. It's like having  an umbrella in the rain; when the umbrella gets blown away, do you get wet?

No problem! And here's the actual rule so you don't have to take my word for it.

112.3d Static abilities are written as statements. They're simply true. Static abilities create continuous effects which are active while the permanent with the ability is on the battlefield and has the ability, or while the object with the ability is in the appropriate zone. See rule 604, "Handling Static Abilities."
