Does shroud protect your monster even if the spell played by my oppent affects all my monsters ?
Like a {Bonfire of the Damned} or a {Mizzium Mortars}? Then yes. Shroud only prevents targeting and since neither of these target, the shroud creature would be affected.
Shroud means "can't be the target of..."
That word "target" is very important in magic. If the spell in question doesnt target the shroud dude ({day of judgment}, {bonfire of the damned}) then shroud has no affect.

Mizzium doesnt work unless ocerloaded though.

It depends. Shroud protects your creature from being targeted. If a spell is specifically targeting all of your creatures, like with something like {Hex}, then shroud will protect that creature from becoming a target.
However, shroud does not stop spells that do global effects, like {Day of Judgement} or an overloaded {Mizzium Mortars}. That is because these effects do not target, they just sweep everything. Again, the key word on the spell in question is target

Yes, effects like Wrath of God, Day of Judgement, Bonfire of the Damned would effect shrouded and hex proof creatures since they do not target that creature.
