If my opponent attacks me with a marit lage token {dark depths}, and then proceeds to give it a {giant growth}, if I {turn to frog} the creature AFTER the giant growth resolves, how big is the creature? A 1/1? Or a 4/4?

I think it's a 4/4. But I may be wrong...

The {turn to frog} checks its current state when cast. If the{giant growth} has already resolved and the marit lage is 24/24, the {turn to frog} will automatically turn the marit into a 1/1 frog. {turn to frog} does not interact with cards played BEFORE its resolution. It simply turns target creature into a 1/1, no ifs and or buts. {giant growth} can buff the 1/1 afterwards though.

It would be a 4/4.

Effects that SET P/T to a certain amount are always applied first when the game check the state of the creature. If you want the full ruling, check ruling 613 for interaction of continuous effects. The parts I think apply best are these:

613.3b Layer 7b: Effects that set power and/or toughness to a specific number are applied

THEN

613.3c Layer 7c; Effects that modify power and/or toughness (but not to a sepcific number) are applied.

So, it would become a 1/1, THEN get the +3/+3.
