Would  {Stuffy Doll}s damage be considered combat damage?

Only if it was attacking. It's tap ability is considered direct damage, not combat.

I would like to add that since {Stuffy Doll} is 0/1, it is impossible for it to deal combat damage unless its power is modified to be a number higher than 0.

{stuffy doll} would receive combat damage. The damage from the triggered ability still is not.
