Can you activate the extort mechanic more than once per turn if you have the available mana? Or is it only once per spell?
For each spell, you can use extort once for each permanent you control that has "Extort". You must pay the mana separately for each extortion.

So if I have three creatures with extort, I can cast a spell, and then tap three mana for each extort right? But only once per spell?

Well, one for each extort, being three mana total, yes.
Can I use the extort ability on a creature that enters the battlefield for that specific spell?

To use Extort, you must already have a permanent with extort in play as you play the spell.

how long can i wait to pay for extort? can i play the spell, wait for it to resolve, then pay extort or do i have to pay for extort when spell is on the stack? im assuming i wont be able to once i change phases.

You pay the cost when it is still on the stack. Think if it as an addition to the spell itself, that makes it cost on B/W more, but drains life.
