Looking for some tips on how to improve this deck to be a force.
Ay yi yi. {Scion of the Ur-Dragon} decks are difficult to comment on, because you can use EVERY card ever printed.
What are your sensibilities as a player? Do you like huge swingy combos? Beating face? Utility/options? Control?
Usually I'm a beat down minded player, but I'm looking to try and do different things since I am able to run everything.
If you're beatdown minded, I would suggest a deck that runs sweepers ({Wrath of God}, {Damnation}, {Armageddon}) tons of ramp (because you can never rely on your commander to make your deck work) and tutors ({Demonic Tutor}, {Mystical Tutor}, {Worldy Tutor}) and of course reanimator spells ({Reanimate}, {Animate Dead})
The problem with 5 colors is mana fixing. The high curve is what you'll be looking at. To play a Scion deck differently is difficult. Dragons tend to have a higher curve anyway. Play a strategy that ramps quickly.
If beatdown is your thing, might I suggest a {Kaalia of the Vast} deck? Those colors have tons of tutors, Angels, Demons and Dragons have amazing EtB effects (enters the battlefield) and you can keep the same strategy. Ramp, reanimate, and tutor.
3 colors is much easier to mana fix then all 5. {Scion of the Ur-Dragon} decks are for the hugely expensive EDH players. Every alpha dual land, fetch lands, shock lands, crazy amounts of utility lands, grossly expensive tutors and every single broken card ever printed.
You should try to get your hands on some filter lands. Secondly you should add {Skithiryx, the Blight Dragon} Nicol always, and the Firemind. Depending on your playgroup the Blight can help seal a win as well as the Firemind by adding his draw/damage combos. Bolas is just beast when you cast him with Ur because he clears an oppents hand and you don't have to pay an upkeep.
I would also add {Coalition Relic} it really can help your curve and its low cost. I also didn't notice {Living Death}? This is nice once you have tossed some dragons in your yard!
Oh and once you can add some shock lands, {Gem of Becoming} will let you grab what you need. I also run some land boosters like {Azusa, Lost but Seeking} and {Burgeoning} neither are terribly expensive. Heck as awesome as your {Cavern of Souls} is for this deck you might consider trading it to acquire other more beneficial cards---if you do PM me I have all of what you would need.

Only problem is, you can only do it once. Once scion is a copy, he no longer has his copy ability, so he can't be copies of everything...

You can't, cause he's not both creatures. Either one or the other. Even if you stack them, he's either going to lose the infect or lose the pump ability.

It's not skithiryx any more cause you turned it into a molten steel, orrr, it's not molten steel cause its skithiryx. Either one or the other, it can't be both at the same time, because the second copy (on the stack) resolves first then the original copy goes off and essentially negates the other one.
Could I get a gavel on this?
The combo works:
Swing with Scion. No blocks declared.
Pay 2 mana and put a copy on the stack for Skittles.
Keeping priority, pay another 2 and put a copy effect for Molten Steel on the stack on top of the first copy effect.
Let the copy on top resolve. (The molten steel copy)
Before the next one does, pump your molten steel 6 times.
Now let everythig resolve.
You now have a 10/4 infect flying dragon that is attacking with no blockers declared.
Ok, I stand corrected. I was under the impression that pumping up the creature would be nullified the moment it became a copy of scythrix. My buddy playing scion will be pleased.

Alternatively you can use moltensteel and a doublestrike dragon for 21 commander damage...
