I've got 2 questions here guys!
1) can you cast or activate something on a turn before the upkeep, such as during the untap step. If so, would it be played before or after untapping.
2) can something be played or activated after "the beginning of the end phase"?
Yes you can play during the untap step, no your lands/other permanents tapped to cast the spell will not untap. Untapping happens once during the phase. Only instant speed spells/abilities may be activated as well during that phase.
Yes you can cast a spell during your end phase, just as you can cast an insant speed spell/ability during an opponents end phase.
You can also cast creatures with flash during that time. Like {yeva, natures herald}

No player receives priority during the untap step and therefore no spells may be cast or abilities activated.
As for the word "beginning" you may not do things during the beginning of any phase. You may do things during phases, but not at these magical subphases many players assume exist because they are mentioned on a card.
When a card says "at the beginning of..." It is literally putting a trigger into effect that might be better understood as "if you start X phase then this puts Y ability on the stack automatically."
