Notes: I am looking for ideas on using {curse of death's hold}. So far it's looking like golgari or junk midrange or control. I am open to ideas, but I am liking the idea of {desecration demon} and a way to make use of his girth and ability.

I love it as a SB card
Im trying to counteract the meta of aggro and double strikers.
I run an enchantment only deck using curse of deaths hold, sphere of safety, o-rings and d spheres. It holds it's own surprisingly enough so long as you pull a verdict if you don't hit your sphere. It really shines against control though, {Curse of Exhaustion} to slow the counters then exile the 6 or so cards that aren't counters lol. If you want the deck list I'll post it
Your best bet is probably Mono-Black Control (personally one of my favorite decks to play in any format), but seeing as we are in the land of multicolored cards (Ravnica) and have access to every color combo of dual lands, I dot see why you shouldn't splash other colors. BG splashing G for {Thragtusk} and {Farseek} might work, anddont forget {Mutilate}.
Build an Esper deck and throw it in.
{Infinite reflection} and a slew of cheap creatures. Probably all the rats since they have usable effects. Throw the reflection on a {desecration demon} and bam, multiple demons. They'll either have to sac a ton of their creatures, or take multiple shots of 6 to the face (unless they have flyers of course.)
{Bitterheart Witch} might help. Especially if you're adding more curses.
I personally like {Heartless Summoning} with {Desecration Demon} and with {Curse of Death's Hold} on the field, most decks can't handle the Demon. No chumps to sac and he just goes off.
I like the Esper build or try Mono black.

Doesnt work like you think it does. In order for Jube to stop his ability it would have to be worded like this:
"Sacrifice a creature: Tap Desecration Demon and put a +1/+1 counter on it. Only an opponent may activate this ability an only during the combat step."
