Basically what would happen if I had a creature with persist and undying at the same time if he came back from the grave would the counters offset each other

Assuming it had no counters on it, there would be two triggers trying to return it from the grave. I would suggest you chose the undying one. ;)
You stack them both, then the last one on the stack would resolve, bringing it back. Once it's back on the field, the second ability looks for it in the gy. It's not there anymore so it does nothing.
So when the creature returned to the battlefield would it have no counters or one of my choosing

One of your choosing. Whichever is associated with the ability you chose to bring it back. If you want persist to bring it back, it'll have a -1/-1 counter on it. If you chose undying (more likely) then it will come back with a +1/+1 counter.
If you get a cycle going, you could make your own {Homarid}. ;D

Their is going to be some sick combos in the near future
The reason you can't have persist and undying with that combo is {melira the outcast} and {coldron of soul} is because of the -1-1 counters

{Melira, Sylvok Outcast} and {Cauldron of Souls} is its own combo, yes. She doesn't help with undying, but the cauldron would work.
