Hello!
For this question, I will use two cards for example: {Polluted Delta} and {Watery Grave}
So, if I play Polluted Delta, pay 1 life and sacrifice it, search for Watery Grave and put it into play: Do I still need to pay 2 life, so Watery Grave doesn't enter tapped, or, since Polluted Delta already defines that the land enters untapped, I don't need to pay 2 life?

U still have to pay the 2 life. It doesnt necessarily say "untapped". There are lands that enter tapped no matter what e.g. {Salt Flats}. In order to avoid that, it would need to say something like, "if it enters the battlefield tapped, then untap it."

Use {Amulet of Vigor} to get around it!

If I have already played a land and have {Shimmer Myr} out could I play an artifact land such as {Ancient Den}?

Artifact lands are still lands, and will be subject to all land-related rules, including only being able to play one land per turn.
In addition, {Shimmer Myr} does not affect artifact lands, as lands are not "cast." Lands do not use the stack, and putting a card onto the stack is, by definition, "casting" it.
