What happens when player 1 casts angel of serenity and names his targets for exile , and in response , player 2 uses ulvenwald tracker to have one of those exile targets in turn fight to kill the angel?
In what order do events resolve and what is the final outcome.

Angel enters and her ability goes on the stack.
Trackers ability goes on the stack last then resolves. If you make {Griselbrand} fight serenity you'll gain 7 life, serenity will die. Her leaving the battlefield triggers and resolves but nothing is yet exiled so nothing happenes.
Her etb trigger will then resolve exiling all targets. Serenity is already gone and wont leave again so targets remain exiled.
Well that blows
Is there a difference if player 3 responds before player 1 has named targets?

Won't happen as soon as the ability triggers targets are chosen.
{cloudshift} your angel in response to the tracker to thoroughly ruin your opponents day
Couldn't you cloudshift in response to the angels ETB trigger?

Yes. The etb would hit stack and another etb would hit stack. The first LTB effect wouldn't trigger. You leave 3 exiled with no chance of return and then 3 new exiled until ltb
The LTB wouldn't resolve is probably clearest.
Nice
