If a death touch creature attacks a creature with hex proof, does the defending creature with hex proof die?

Yep, sure does.

Hex proof stops targeting by opponents,
Deathtouch is just a lethal to creatures type of combat damage.

Just remember deathtouch applies to any form of damage. If the source has deathtouch and is able to deal atleast one damage, then that damage is lethal. See {Pestilence Demon} with deathtouch, lol.
