Wouldn't both abilities hit the stack, then you sac one of them, then the other ability wilfive ignored bc there is no legal target?
Or do they happen simultaneously?

They both go on the stack. Once something is on the stack, it exists separate from the object that made it. Since the card doesn't use targets, you'll have to sac a dude in each case.

third creature on the field, you could have both 'masters target that one. After the first trigger made you sac it, the second one would "fizzle fo' shizzle".
But, with the current wording, you'll ALWAYS have to choose a creature as it resolves, so you'd have to sac the other dude and a 'master.
Magic's not too bad, once you get certain fundamentals. It can get complex in a hurry. The trick is to break it down one thing at a time and look at each piece.
