If my opponent has a {wild defiance} out and I use my {spellskite} to steal something that he aimed at one of his creatures does his creature still get the +3/+3?

so wrong. card was alreay targeted buff is already done. spellskite can only get buffed if it's controller also has a {wild defiance}

Almost. Once a target is declared the TRIGGER for defiance goes on the stack immediately, at this point a kite may steal the ability or the spell can be countred, etc. but regardless that trigger is still waiting to resolve and will resolve before that origional spell.

So you are saying that the +3/+3 will not resolve if the spell is stolen because the ability has not yet hit one of my opponents creatures?
It will resolve. Once your creature gets targeted wild defiance basically casts an uncounterable {giant growth} on that creature. It doesnt matter what happens after that the triggered ability is already strapped to that creature.
Actually, once the creature is targetted it gets the buff until end of turn. Then if you use the skite's ability, it also gets the buff. Because even though the target was changed, it doesn't mean that the target never happened before. That's my call anyways lol

No. Once the original creature is targeted, Wild defiance will trigger. Even if you change the target to Spellskite, the +3/+3 will still be on the stack for the other creature. Or you could redirect it after the +3/+3 resolves. Either way, Spellskite isn't stopping the buff.

Thank you for clarifying! Now I need to find some other clever way to stop all the infect decks at my local FNM... If only the spellskite could steal the +3/+3! (but it can't :-()

Could you use the spellkite to change the target of wild defiances triggered ability to spellkite? Or because it's not really a targeted ability it won't work?

If a spell or ability's oracle text does not have te word "target" then it does not target regardless of the effect.

When you use {spellkite}s ability, does it become targeted? A la you cast {Shock} i use kite with defiance out. Does kite get +3/+3?
Edit: Also can you use spellkites ability even if the spell already targets him? And if so does it become targeted again?

no you actually have to change the targets to get more of the effect, 2 spellskites could do it though.

Edit: {Essence harvest} couldnt be used more literarily.
So the creatures like {phantasmal bear} sac as soon as whatever targets hits the stack, or does the sac use the stack ?
It becomes a target, secrifice goes on the stack, sacrifice bear, spell resolves, no target, spell fizzles.
So since sac is triggered you could sac to something else instead?
